Swindon’s Pipp & Co rises again with new Bath and Bristol cafés

A Swindon bakery that has built a loyal following for its artisan doughnuts is continuing its rise, with two new cafés set to open in Bath and Bristol over the coming months.

Pipp & Co, which started life selling handmade bakes at farmers’ markets and pop-up events before establishing itself on the high street, is taking another significant step in its growth story while keeping its production firmly rooted in Swindon.

The family-run business will open its Bath café on New Street in August, followed by a second Bristol venue on Redcliff Street in September, complementing its existing café at College Green. Both sites occupy former food premises and are expected to create new jobs while introducing the bakery’s handcrafted products to a wider audience.

Although best known for its award-winning artisan doughnuts, Pipp & Co has steadily broadened its range. The new cafés will place greater emphasis on lunchtime dining, serving freshly prepared salads, sandwiches, toasties and paninis alongside its selection of sweet treats. Customers can also expect an expanded drinks menu featuring popular choices such as matcha and ube beverages.

Owners Betina and Mario Evangelista say the expansion has been carefully planned to ensure quality remains at the heart of the business.

“Opening these two new cafés in Bath and Bristol is an exciting next step for us,” said Betina. “Our production capacity in Swindon means we can smoothly manage this expansion while ensuring the exact same small-batch quality and traditional craftsmanship that our customers expect, while also introducing our new in-house sandwich and salad options.”

Every product sold in the new cafés will continue to be made at the company’s Swindon production facility. Pipp & Co prides itself on using no artificial ingredients, flavourings or additives, sourcing ingredients locally wherever possible and producing its signature brioche doughnuts using a traditional 48-hour fermentation process.

The bakery has already earned national recognition, winning PETA’s Best Doughnut Award in 2025, and continues to supply independent retailers, farm shops, corporate customers and online shoppers across the region.

The business is also looking ahead to further expansion, with plans to open additional cafés in the future. Online pre-ordering for collection and local delivery services are also expected to be introduced as Pipp & Co continues to grow.

For a business that began with market stalls and a passion for handcrafted baking, the latest expansion is another sign that Swindon’s thriving independent food scene continues to make its mark well beyond the town’s borders.
