Rodríguez, who moved to the UK from Spain 10 years ago, was recently appointed Head Chef at the Sun Inn in Lydiard Millicent, where he has brought a new concept to the pub’s menu, a fusion of Spanish and British gastronomies. He stands out for his consciousness when it comes to sourcing local products, helping local businesses and fighting against food waste.

Talking about his award he said: “It is a satisfaction to be able to promote good sustainable practices and I hope that this becomes a habit within the sector, as nowadays it is very much needed. We all have the responsibility to enhance environmental awareness and also implement solutions in favor of social and economical sustainability in our community.

I am very happy with this recognition and I dedicate it to my wife Laura, who is always helping me achieve my goals.”.

Alexander Zawadzki, the award’s organiser commented on the chef’s success at the World Travel Market in London: “Our most sincere congratulations to Francisco for all his efforts in creating a more sustainable kitchen. He is undoubtedly an example to follow and we hope that other chefs are encouraged and begin to implement conscious measures in the kitchen, sourcing food locally and avoiding food waste”.
